Garlic & Aged Garlic Extract (Allium sativum)

Garlic’s active sulfur compound, allicin, does not exist inside an intact clove — it forms only when the enzyme alliinase meets alliin as you crush or chop the raw clove. Kitchen preparation and supplement formulation make all the difference.

Also known as: Lahsun · Lasuna · Aged Garlic (SAC)  |  Part used: Fresh crushed bulb clove or aged aqueous bulb extract

Traditional use — food first

Across Indian households, cloves of desi lahsun are crushed and rested for a few minutes before tempering into dals, roasted in winter chutneys, or infused into warm mustard oil for external massage.

Traditionally, 1–2 crushed raw or lightly roasted cloves are taken with warm water or food during cold winter months for circulation and heart-healthy kitchen nutrition.

What we actually know

When raw garlic is crushed, alliinase converts alliin into allicin within 5–10 minutes. However, cooking an uncrushed clove whole or dropping raw garlic directly into stomach acid inactivates alliinase before allicin can form.

In clinical nutrition research, **Aged Garlic Extract (AGE)** — standardized to water-soluble S-allyl cysteine (SAC), typically 600–1,200 mg/day — has the strongest human trial evidence for supporting healthy blood pressure and arterial elasticity without raw garlic odor.

Garlic supplements are supportive dietary tools and never replace prescribed antihypertensive or lipid-lowering medications.

How to tell real from adulterated

This is where most buyers get quietly cheated. Cheap garlic & aged garlic extract powder is easy to bulk out or sell old — here is what separates genuine material from the filler:

  1. Allicin potential vs Aged Garlic (SAC): if buying dried garlic tablets, they must be enteric-coated to protect the alliinase enzyme from stomach acid; otherwise look for Aged Garlic Extract standardized to S-allyl cysteine (SAC).

  2. Avoid garlic oil macerates that only contain trace volatiles dissolved in cheap soybean oil.

  3. In the kitchen: crush or finely chop raw garlic and let it sit on the cutting board for 10 minutes before cooking so allicin forms before heat hits the enzyme.

  4. Country origin & bleaching: prefer tight, purple-streaked local garlic bulbs over chlorine-bleached, sprouted imported bulbs.

Safety & who should check first

  • SURGERY & BLEEDING WARNING: high-dose garlic supplements inhibit platelet aggregation. Stop concentrated garlic supplements at least 7–14 days before any scheduled surgery or dental extraction, and consult your doctor if on blood thinners (warfarin, clopidogrel, aspirin).
  • HIV / protease inhibitor interaction: concentrated garlic supplements can significantly reduce blood levels of saquinavir and certain antiretroviral drugs.
  • Raw garlic on an empty stomach can cause burning gastritis or reflux in sensitive individuals.

Why you can trust this page

The "10-minute cutting board rule" is the best free nutrition upgrade in any kitchen: crush your lahsun first, prep the rest of your vegetables while the enzyme works for 10 minutes, and only then add it to the pan.
