Ceylon Cinnamon vs Cassia (Cinnamomum verum (Ceylon) vs Cinnamomum cassia)
Most "cinnamon" sold in supermarkets and cheap blood-sugar capsules is Cinnamomum cassia, which contains high levels of hepatotoxic coumarin. True Ceylon cinnamon (Cinnamomum verum) has ultra-low coumarin and is the only variety suitable for regular daily use.
Also known as: True Cinnamon · Sri Lankan Dalchini · Taj (Cassia) | Part used: Inner dried quill bark
Traditional use — food first
Used across South Asian and Mediterranean kitchens as a warming aromatic bark in savoury pilafs, herbal infusions, and winter spiced drinks.
Traditional preparations used small pieces of whole bark steeped briefly in hot water or cooked in food — never multi-gram doses of raw Cassia bark powder every day.
What we actually know
Cinnamon polyphenols and cinnamaldehyde have been studied in human trials for post-meal glucose response and insulin sensitivity, with mixed and modest outcomes across meta-analyses.
The critical scientific distinction is safety: Cassia cinnamon contains up to 1% coumarin (roughly 250x more than Ceylon cinnamon). Regular gram-level intake of coumarin can cause reversible liver toxicity in sensitive individuals.
Water-soluble cinnamon bark extracts and true Ceylon cinnamon minimize coumarin exposure.
How to tell real from adulterated
This is where most buyers get quietly cheated. Cheap ceylon cinnamon vs cassia powder is easy to bulk out or sell old — here is what separates genuine material from the filler:
Botanical name on label: insist on "Cinnamomum verum" or "Cinnamomum zeylanicum". If the label simply says "Cinnamon bark (Cinnamomum cassia / aromaticum / burmannii)", it is high-coumarin Cassia.
Visual quill check: real Ceylon cinnamon quills look like a tightly rolled cigar filled with many thin, papery, fragile layers. Cassia is a single thick, hard, woody scroll.
Taste and scent: Ceylon is delicate, sweet, and citrus-floral; Cassia is fiercely hot, spicy, and one-dimensional.
Lead contamination alert: following recent FDA recalls of lead-adulterated ground cinnamon brands, only buy from brands that publish batch heavy-metal certificates.
Safety & who should check first
- Liver safety: never take high-dose daily Cassia cinnamon supplements; European Food Safety Authority (EFSA) sets the Tolerable Daily Intake of coumarin at 0.1 mg/kg body weight.
- Blood sugar medications: monitor glucose closely if combining cinnamon extracts with diabetes medications.
- Oral mucosa sensitivity: undiluted cinnamon oil or heavy cinnamon powder can irritate mouth and esophageal tissues.
Why you can trust this page
Hold a stick of real Ceylon dalchini between two fingers and you can crumble its thin layers like dry pastry. Try that with cheap Cassia (taj) bark and you will need a hammer or mortar to break it.
